Salmon with Soba Noodles and Soy Beans

Salmon (with skin on, of course) is one of my favourite seafood dishes, and when it is paired with its great mate soba life doesn’t get much better! I have used Edamame Soybean Pods in this recipe, these delightful little morsels are harvested when young and are a major source of protein.You will find them in the frozen aisle of the Supermarket, I bought mine from Coles, but if you can’t find them use Broad Beans. If seafood is not your thing then omit the salmon and toss your favourite vegetables through the soba noodles.

Five Spice Beef and Noodles

Chinese 5-spice powder rules! It is a combination of star anise, cloves,cinnamon a little szechwan pepper and fennel. A friend of mine makes a paste of olive oil and 5 spice then brushes it over chicken breasts and serves it with a salad, or a whole chicken and serves Asian vegetables… too easy!

Pork and Pineapple Red Curry

The secret to a good curry is to let the flavours party in the pan before you add the liquid, more importantly do not add more curry paste after you have added the liquid.Curry paste has to be cooked down, you know how much heat your taste buds like so adjust accordingly at this stage.Remember the sauce is the star so as your cooking you might feel it needs more lime, sugar or fish sauce etc so taste, taste, taste!!
