I love pesto,but sadly my husband always puts on his “Picasso” face when he sees anything that remotely resembles it! For me it is the star of this dish. If you want to keep it vegetarian, add Israeli couscous (Pearl Couscous). Enjoy!

Barbeque Chicken with Red Curry Vegetables

This is a great recipe for when time is not your friend! The flavours work well together, adjust red curry paste and chilli if you like a milder curry, or crank it up if you like it hot! Boiled rice can be served with this dish.
