Bocconcini Marinade
  1. Place all ingredients in a bowl and mix well, cover and leave 1 hour or overnight.
Remaining Ingredients
  1. Cut tomatoes in half, put on a plate (cut side up) and season with sea salt and freshly ground black pepper. Remove bocconcini from fridge and stir well. Set a production line up of skewers,tomatoes, basil, bocconcini and proscuitto. Put on a plate and garnish with lemon zest, drizzle of olive oil and salt and pepper to season.
Recipe Notes

Make sure when you take a  bocconcini from the marinade to run it through the herbs to coat, it really makes a difference to the over all flavour.

You can buy marinated bocconcini which tastes great, but I thought I would give you this recipe for times when you can't find any.

I used chilli infused oil to drizzle, this is optional!
