Instructions
  1. Prepare vegetables for grilling. In a large bowl toss vegetables in olive oil, sea salt and cracked pepper, set aside. Add shelled pistachio nuts to food processor and blitz, add remaining ingredients and with motor running add oil in a thin steady stream until you have a glossy, puree consistency. Char-grill vegetables until golden brown and cooked through, serve with pesto.
Recipe Notes

You can buy shelled pistachio nuts but they just don't hold the same flavour as the ones in their shell. This is the same for parmesan cheese, grate straight from the block it tastes so much better then pre-packaged. The cheese will last well in the fridge if you cover in cling wrap and re-wrap in fresh cling wrap at least once a week.

The vegetables I used in this recipe are leftovers that I had, but you can also add sliced squash, haloumi also  tastes amazing when grilled with these vegetables!
