  1. Peel and devein prawns and roughly chop. In a bowl mix remaining ingredients, stir through prawns, set aside in fridge.Preheat oven to 180c, working with one pastry sheet at a time brush 4 sheets with melted butter, using scissors cut pastry into 8cmx8cm squares, push the pastry squares into mini muffin tin ensuring the bottom of the filo is flat, this stops the filling from falling out, continue doing this till you have 20 cases made. Bake for 6-8 minutes, turning muffin tin half way through cooking, cool. Fill with prawn filling, top with grated lemon rind and a grind of sea salt and black pepper.
