Garlic Prawns
  1. In a large glass bowl combine prawns, garlic, chilli flakes, lemon juice,parsley, salt and pepper, drizzle with olive oil combine well, cover with cling wrap, set aside.
Proscuitto Crumbs
  1. Preheat oven to 180c, blitz bread in food processor ( you will need a medium to fine crumb) Line a baking tray with baking paper and spread crumbs and pine nuts onto tray, bake until lightly browned. Set a timer for 5 minutes as it is easy to forget their in the oven. When ready remove from oven, transfer to a plate to cool.Cook proscuitto until crisp, cool. In a bowl combine crumbs, pine nuts, crushed proscuitto, dill, zest,olives and garlic, season with pepper, set aside. Just before serving drizzle with olive oil until just combined.
To Serve
  1. Cook linguine in a large pot of boiling salted water (until al dente) drain. Heat a large pan, cook prawns in two batches for 2 minutes each side. Add linguine, toss adding a drizzle of oil if needed, add parsley season with salt and pepper, toss and divide into four large bowls, sprinkle with crumb mixture and serve with lemon wedges.
Recipe Notes

You can use panko breadcrumbs 1/2 cup no need to blitz just follow oven directions as for bread.

The amount of linguine used is a personal choice, you can add more linguine to this recipe if you really enjoy your pasta! For me, I don't like too much pasta as I find it can weigh down the dish and the remaining ingredients get lost!
