I love this dip! It also tastes great on toasted ciabatta with avocado and a drizzle of olive oil.

  1. Halve the capsicum and squash down with the back of your hand, grill the capsicum until skin blackens, put onto a plate cover with cling wrap and set aside. Once cooled peel away skin, roughly chop the capsicum and put into a food processor with remaining ingredients, season to taste. Remove from fridge 30 minutes before required.Serve with pita dippers.
