  1. Put potatoes in a large saucepan of cold water, cook until just tender, drain and return to saucepan, place on a low heat to remove any excess moisture. remove from heat and roughly mash, set aside to cool. Add salmon,shallots,lemon zest, parsley, dill, capers, mayonnaise,dijon and 1 egg (lightly beaten) sea salt and cracked pepper,combine gently and divide mixture into 8 even patties. Put flour, remaining eggs (lightly beaten) panko breadcrumbs into separate bowls.Coat a pattie with flour ( cup your hands and take the pattie from one hand to the other, this keeps the pattie in shape) do the same with the egg mixture and crumbs. Set aside in fridge. Heat oil in a large fry pan over medium heat, add half the patties and cook 3-4 minutes each side or until golden brown. Repeat with remaining patties.
  2. To make sauce, stir sugar and water in a small saucepan for 2 minutes until sugar dissolves , set aside to cool. Once cooled stir in lime juice,fish sauce,sake,chilli and lime leaves. In a small pan lightly brown almonds ,cool. To make salad, Blanch snow peas and asparagus in boiling water for about 20 seconds,drain and run under cold water to cool. In a bowl combine snow peas, asparagus and coriander. Serve salad with salmon patties, chilli lime dressing a sprinkling of almonds and a lemon wedge.
