  1. Cut the fish fillets into bite size pieces and put into a glass dish, mix all marinade ingredients together pour over fish and gently combine until all the fish is coated.Cover and leave for 2 hours in the fridge, bring back to room temperature before cooking. In a wok or large pan add a drizzle of peanut oil, add fish and lightly brown each side. With a spatula scrape round the glass bowl getting any remaining marinade juices into the wok or pan. Cook for a few minutes or until fish is just cooked through, stir in rice, top with extra coriander leaves and serve with yoghurt and papadums .
Rice
  1. Put rice into a colander and rinse until water runs clean, in a saucepan bring 2 cups of water to the boil, add bay leaves, cinnamon stick, shallots, rice, butter and seasonings. Boil for 3 minutes, reduce the heat to low, cover and simmer for 8 minutes, avoid removing the lid or stirring. Remove from heat and let stand, covered for 5 minutes, remove cinnamon stick and bay leaves. Add coriander and lightly fork through the grains.

  1. Combine all ingredients together and set aside in fridge until ready to serve.
Recipe Notes

You will need a mortar and pestle to grind down the star anise, I have one from Kmart which does the job!
