  1. Heat oil in large pot, add onion cook for 2 minutes add garlic and ginger stir through, add paste, cook stirring for 30 seconds. Add sweet potato, broccolini stalks ,chilli and lemongrass stir through to coat then add stock,water, fish sauce, lime juice and coconut milk, stir to combine and simmer for 10 minutes. Soak noodles in boiling water for 10 minutes, drain. Add noodles, squash,eggplant and chopped broccolini florets to the pot simmer for 10 minutes. Adjust seasonings, serve with picked corriander leaves.
Recipe Notes

Cut stalks from broccolini and dice, roughly chop florets, add to soup as per recipe .

Adjust fish sauce and chilli to your taste. You can also add 1/2 tablespoon of brown sugar to balance flavours.

I always use continental stock pot there are 4 pods per packaging.

Take off outer 2 layers of lemongrass stem, discard. Trim the base then bash the stem with a meat mallet,  chop finely.
